The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid into a firm jelly as it cools.
Sugar
Adds sweetness and body to the syrup.
Orange juice
Provides the main flavor and some acidity.
Lemon juice
Adds acidity that brightens the flavor.
Egg whites
Coagulate when heated and collect scum so it can be skimmed off.

The step that matters

Skimming off all scum. Egg whites coagulate as the liquid heats and trap cloudy impurities. Removing that scum thoroughly keeps the jelly clear, so skim carefully as it comes to a boil.

Swap the orange

How well each one fits the dish's main ingredients (gelatin, lemon, sugar, egg):

  1. Vanillafits about as well
  2. Orangethe original
  3. Raspberryfits less well
  4. Raisinfits less well

Fit is the average pairing score against gelatin, lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
