Why it works: Clove and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓
Soused Tripe
Ingredients
Directions
Prepare the tripe according to directions for cutting and curing meats.
Layer the tripe in a stone jar, seasoning each layer with pepper and coarse sea salt.
Pour boiling vinegar over the tripe. Optionally, add whole cloves, a sprinkle of mace, and a stick of cinnamon that have been boiled in the vinegar.
Alternatively, cover with the jelly or liquid from boiling the tripe.
When ready to serve, remove from the jar and scrape off the liquid.
Broil, fricassee, fry in butter, or fry plain as desired.
