Directions

Prepare the pig

  1. Score the pig in squares and rub lard all over it.

  2. Make a dressing by mixing cornmeal and coarse sea salt, then add boiling water to form a stiff dough.

  3. Place the dressing in pans and bake until brown.

  4. Break up the baked dressing and mix in butter, pepper, and thyme.

Stuff and bake

  1. Fill the pig with the dressing, sew it up, and place it on its knees in a pan.

  2. Add enough water to the pan to cook the pig.

  3. Baste frequently with the gravy and the red pepper pods.

  4. Turn the pig while baking, basting until fully cooked.

What each ingredient does

Pig
Forms the main body of the dish and provides the meat that cooks through during baking.
Cornmeal
Forms a stiff dough that bakes into a browned, sturdy dressing for stuffing.
Lard
Rubbed over the skin to add fat that helps it brown during baking.
Butter
Mixed into the crumbled dressing to add richness and moisture.

The step that matters

Turn the pig while baking, basting until fully cooked. A whole stuffed pig cooks unevenly because its thick parts take longer to heat through. Turning it and basting often keeps the surface moist and helps the meat cook evenly without drying out.

Swap the thyme

How well each one fits the dish's main ingredients (butter, pepper):

  1. Parsleyfits better
  2. Sagefits about as well
  3. Thymethe original
  4. Tarragonfits less well

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
