Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine grated lemon, sugar, egg yolks, butter, milk, and cornstarch. Beat until well mixed.

  3. Pour the mixture into a pie crust and bake until set.

Make the meringue and finish

  1. In another bowl, beat the egg whites until soft peaks form, then gradually add 3 tablespoons of sugar until stiff peaks form.

  2. Spread the meringue over the baked pie and brown it in the oven for a few minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the filling and add richness and a custard-like structure as they set.
Cornstarch
Thickens the lemon filling so it holds its shape when sliced.
Sugar
Sweetens the filling and balances the sharpness of the lemon.
Egg whites
Whip into a foam that forms the meringue topping and gives it volume.
Butter
Adds fat for a smoother, richer texture in the filling.

The step that matters

Baking the filling until set. Egg yolks and cornstarch set the filling as it heats. Underbaked filling stays runny, while overbaking can make it weep or crack, so watch for it to firm up.
