Apple Tarts

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Peel, quarter, core, and boil the apples in ½ cup of water until very soft.

  2. Mash the apples until smooth.

  3. Mix the mashed apples with egg yolks (or whole eggs), lemon juice and rind, butter, and sugar.

Bake and top

  1. Line small tart tins with puff pastry and fill with the apple mixture.

  2. Bake in a 400°F (200°C) oven for 5 minutes.

  3. Beat the egg whites with powdered sugar and spread the beaten egg whites on top of the tarts.

  4. Return the tarts to the oven to brown slightly.

What each ingredient does

Tart apples
Cook down to a soft pulp that forms the body of the filling.
Egg yolks or whole eggs
Bind the apple mixture and help it set as it bakes.
Butter
Adds richness and a smoother, softer texture to the filling.
Sugar
Sweetens the filling and helps it brown in the oven.
Lemon juice and rind
Add acidity and fragrance that balance the sweetness of the apples.
Egg whites
Whipped with powdered sugar to form a topping that browns lightly in the oven.

The step that matters

Returning the tarts to the oven. The meringue-style topping browns quickly once the tarts are back in the oven, so it can scorch if left unattended. Watch it closely and remove the tarts as soon as the top is lightly golden.

Swap the apple

How well each one fits the dish's main ingredients (egg, lemon, butter, sugar):

  1. Vanillafits better
