What each ingredient does

Cauliflower
Is the vegetable being preserved, giving the pickle its crisp-tender bite and main texture.
Vinegar
Provides acidity that preserves the cauliflower and gives the pickle its sharp flavour.
Mustard
Thickens the hot vinegar so it pours and clings, adding a sharp, pungent flavour.
Brine
Salt-cures the florets over two days, drawing out water and seasoning them before pickling.

The step that matters

Adding mustard to the vinegar gradually. Mustard must be whisked in slowly while the vinegar is hot so it dissolves evenly and thickens smoothly; adding it all at once can leave lumps and an uneven, grainy pour.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (cauliflower, egg, pepper, allspice, cinnamon, vinegar, mustard):

  1. Horseradishfits better
  2. Cucumberfits better
  3. Broccolifits better
  4. Onionthe original

Fit is the average pairing score against cauliflower, egg, pepper, allspice, cinnamon, vinegar, mustard. Candidates are from the same food group and used in at least 100 recipes.
