Fried Spring Chicken

Ingredients

Directions

  1. Heat a skillet on the stove with lard and butter.

  2. Once hot, add the chicken and sprinkle with flour, salt, and pepper.

  3. Cover the skillet and cook over moderate heat.

  4. When lightly browned, turn the chicken and sprinkle more flour, salt, and pepper if needed.

  5. Add more lard and butter if necessary, and cook slowly until done, about 30 minutes.

  6. To make gravy, beat the egg yolk, strain, and stir it into the gravy after adding flour and milk.

  7. Cook the gravy until it boils, then remove from heat.
