Fried Oysters

Ingredients

Directions

  1. Drain the oysters and remove all bits of shell. Sprinkle with pepper and coarse sea salt, then set aside in a cool place for 10-15 minutes.

  2. If the oysters are small, mix them with the rolled crackers and their liquor. Let stand for 5 minutes, then add a little salt and pepper.

  3. Mold the mixture into small cakes with 2-3 oysters in each. Roll in dry crackers until well coated.

  4. Fry in hot lard and butter or beef drippings until golden brown. Serve hot in a covered dish.

  5. Alternatively, dip the oysters in beaten egg yolk seasoned well, then in cornmeal mixed with a little baking powder. Fry in hot lard like doughnuts.

  6. For a quick method, drain the oysters, place them in a hot frying pan, and turn to brown on both sides. Serve immediately with butter, pepper, and salt, or add a little cream before serving on toast.
