Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients

Directions

Prepare

  1. Wash the oyster shells and open them, detaching the flat shell while keeping the oysters in the deep shell.

Serve

  1. Serve 6 oysters on a plate with a quarter of lemon in the center.

  2. Eat with coarse sea salt, black pepper, and lemon juice or vinegar.

  3. For a more attractive presentation, drain the oysters in a colander, sprinkle with salt and pepper, and place them on ice for 30 minutes before serving.

  4. Serve with horseradish, chili sauce, slices of lemon, or simply vinegar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flesh, whose briny, mild flavour is the point of the dish.
Lemon
Its acidity brightens the oyster's briny flavour and balances the salt.

The step that matters

Opening the oysters. Opening them carefully keeps the oyster liquor inside the deep shell and avoids shell fragments. The liquor carries much of the flavour, and a cracked shell can make the oyster unsafe to serve raw if it is not fresh.

Swap the horseradish

The recipe marks horseradish as optional. How well each one fits the dish's main ingredients (oyster, lemon, pepper, vinegar):

  1. Cucumberfits better
  2. Capsicumfits about as well
  3. Shallotfits about as well
  4. Horseradishthe original

Fit is the average pairing score against oyster, lemon, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
