Why it works: Asparagus and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 1,968 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Eggs and Asparagus

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the asparagus

  1. Cut the asparagus into pieces half an inch long.

  2. Boil the asparagus for 20 minutes, then drain until dry.

  3. In a saucepan, heat the asparagus with the drawn butter until it boils.

  4. Season with salt and pepper, then pour into a buttered dish.

Bake and serve

  1. Break the eggs over the surface of the asparagus.

  2. Place a small piece of butter on each egg, sprinkle with salt and pepper.

  3. Bake in a 350°F (175°C) oven until the eggs are set.

What each ingredient does

Asparagus
Forms the bulk of the dish and gives a tender, vegetal base for the eggs.
Eggs
Set when baked, binding the dish into a soft, custard-like layer.
Drawn butter
Adds richness and moisture, coating the asparagus and carrying flavour.

The step that matters

Baking until the eggs are set. Eggs set as their proteins coagulate with heat. Removing the dish too early leaves runny whites, while overbaking makes the yolks dry and rubbery.

Swap the asparagus

How well each one fits the dish's main ingredients (butter, egg, pepper):

  1. Capsicumfits about as well
  2. Asparagusthe original
  3. Chivefits about as well
  4. Potatofits about as well

Fit is the average pairing score against butter, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
