Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the onions

  1. Wash the onions thoroughly.

  2. Place the onions in a saucepan with slightly salted water and boil for 1 hour, adding more boiling water as needed.

  3. Remove the onions and let them dry on a cloth.

Bake and finish

  1. Wrap each onion in buttered tissue paper, twisting the top to seal it, and bake in a 300°F (150°C) oven for nearly 1 hour or until tender.

  2. Peel the onions and place them in a deep dish.

  3. Brown the onions slightly by basting them freely with butter for an additional 15 minutes.

  4. Season with pepper and coarse sea salt, then pour melted butter over the top.

What each ingredient does

Large spanish or bermuda onions
Provide the sweet, tender flesh that becomes soft and mild during long cooking.
Butter
Adds richness and moisture, and helps the onions brown when basted.

The step that matters

Brown the onions slightly by basting them freely with butter. Butter carries heat to the onion surface and promotes browning, so basting keeps the exterior golden without drying it out. Too little basting leaves the surface pale.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
  4. Onionthe original

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
