Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the ice and softens its texture by lowering the freezing point.
Lemon juice
Adds acidity that brightens the flavour and balances the sugar.
Egg whites
Add foam and body, giving the ice a lighter, more tender texture.
Crushed ice
Provides the cold needed to freeze the mixture.
Coarse sea salt
Lowers the temperature of the ice, helping the mixture chill and freeze.

The step that matters

Layering the crushed ice and salt. Salt mixed with ice lowers its melting point, so the surrounding ice gets much colder than ice alone. This extra cold is what freezes the mixture. Too little salt or ice leaves the mixture slushy or unfrozen.

Swap the orange

How well each one fits the dish's main ingredients (sugar, lemon, egg):

  1. Orangethe original
  2. Vanillafits about as well
  3. Limefits less well
  4. Raisinfits less well

Fit is the average pairing score against sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
