Beets with Butter
Ingredients
Directions
Cook the beets
Wash the beets, being careful not to break the skin.
Place the beets in a saucepan and cover generously with boiling water.
Boil until tender; young beets will cook in about 1 hour, while older beets may take 4 hours or more.
Once cooked, transfer the beets to cold water.
Peel and serve
Rub off the skin and cut the beets into thin slices.
Season with salt and butter, then serve immediately.

What each ingredient does
- Beets
- Provide the main body, sweetness and earthy flavour of the dish.
- Butter
- Adds richness and a smooth, glossy coating to the warm slices.
The step that matters
Boil until tender. Beets vary widely in age and size, so cooking time differs greatly. Undercooked beets stay firm and fibrous, while the skin and flesh soften only once the roots are fully tender through to the centre.
