Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cut the eggplants in half lengthwise and scoop out the insides.

Stuff and bake

  1. Mash the insides finely and mix with the dressing, adding more salt, pepper, and butter.

  2. Return the mixture to the eggplant shells.

  3. Place the stuffed eggplants on a pan and bake for 45 minutes.

What each ingredient does

Eggplants
Forms the edible shells and the soft, moist filling once the flesh is scooped and mashed.
Butter
Adds fat and richness, helping the mashed filling taste rounder and feel silkier.

The step that matters

Mashing the eggplant insides finely. Eggplant flesh breaks down into a smooth, cohesive filling only when mashed finely; coarse pieces stay watery and separate from the dressing, leaving the stuffing loose.

Swap the eggplant

How well each one fits the dish's main ingredients (pepper, butter):

  2. Potatofits better
