Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, acidity and flavour of the soup.
Butter
Adds fat and richness, carrying flavour from the onions.
Flour
Thickens the soup as it cooks with the liquid.
Sugar
Balances the acidity of the tomatoes with sweetness.

The step that matters

Cook the flour mixture before adding liquid. Stirring the flour into the melted butter and onions and mixing it well helps prevent lumps when the hot water and tomatoes are added, giving a smooth, evenly thickened soup.

Swap the tomato

How well each one fits the dish's main ingredients (sugar, clove, pepper, butter, onion, flour):

  1. Leekfits better
  2. Shallotfits better
  3. Chivefits better
  4. Tomatothe original

Fit is the average pairing score against sugar, clove, pepper, butter, onion, flour. Candidates are from the same food group and used in at least 100 recipes.
