Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Bake the potatoes

  1. Preheat the oven to 400°F (200°C).

  2. Bake the potatoes until tender.

Fill and finish

  1. Cut the end from each potato and carefully remove the flesh with a spoon.

  2. In a bowl, cream the potato flesh with sweet cream or milk, butter, salt, and pepper.

  3. Replace the mixture back into the potato jackets.

  4. Stand the potatoes in a pan, open end up, and bake until light brown.

  5. Serve very hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the structure of the dish and, once creamed, provide a soft, fluffy filling.
Sweet cream or milk
Adds moisture and richness, loosening the mashed potato into a smooth, creamy filling.
Butter
Adds fat for richness and flavor, and helps the filling stay smooth and tender.

The step that matters

Stand the potatoes in a pan, open end up, and bake until light brown.. Baking until only lightly browned sets the filled surface and warms the filling through. Browning too far can dry the top and toughen the edges.

Swap the potato

How well each one fits the dish's main ingredients (cream, butter, egg, pepper):

  1. Potatothe original
  2. Spinachfits about as well
  3. Asparagusfits about as well
  4. Capsicumfits about as well

Fit is the average pairing score against cream, butter, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
