Sweetbreads with Peas

Ingredients

Directions

Prepare the sweetbreads

  1. Soak the sweetbreads in cold water for 1 hour.

  2. Parboil the sweetbreads and remove rough edges, membranes, and sinews.

  3. Place the sweetbreads in cold water and keep on ice until needed.

Cook and serve

  1. In a chafing dish, melt the butter and add the sweetbreads.

  2. Once the butter is absorbed, add the beef stock, chopped celery leaf, salt, pepper, and brown flour.

  3. Turn the sweetbreads and reduce the mixture by half.

  4. Meanwhile, open the can of peas and warm them in the chafing dish with salt, pepper, and 1 tablespoon of butter.

  5. Serve the peas and sweetbreads together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Serve as the main protein, tender and rich once parboiled and cleaned.
Beef stock
Provides the liquid that reduces into a savory sauce around the sweetbreads.
Brown flour
Thickens the stock as it reduces, giving the sauce body.
Butter
Adds richness and fat, helping to brown the sweetbreads and carry flavor.
Peas
Provide sweetness and a fresh vegetable element that pairs with the sweetbreads.

The step that matters

Reducing the sauce by half. Reducing concentrates the stock's flavor and thickens the sauce, but if the heat is too high the flour can scorch or the sauce can turn too salty.

Swap the white pepper

How well each one fits the dish's main ingredients (peas, butter, beef, celery, flour):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Turmericfits better
  4. White pepperthe original

Fit is the average pairing score against peas, butter, beef, celery, flour. Candidates are from the same food group and used in at least 100 recipes.
