  2. Cream the butter and gradually add the sugar.

  3. Beat in the egg yolks one at a time.

  4. Sift together the flour and baking powder, then add to the mixture.

  5. Stir in the lemon rind, almonds, and raisins.

  6. Fold in the beaten egg whites gently.

Bake

  1. Line a baking pan with paper and pour the mixture in.

  2. Sprinkle the top with chopped nuts.

  3. Bake for 1.5 hours.

What each ingredient does

Butter
Creamed with sugar to trap air and give the cake a tender, rich crumb.
Eggs
Yolks add richness and emulsify the batter; whipped whites lighten and give structure.
Flour
Forms the main structure of the cake as its proteins set during baking.
Baking powder
Releases gas in the batter, helping the cake rise and become light.
Sugar
Sweetens the cake and helps create a fine, aerated texture when creamed with butter.
Sultana raisins
Add chewy pockets of sweetness and moisture throughout the cake.

The step that matters

Fold in the beaten egg whites gently. Egg whites hold air that gives the cake its lift. Vigorous stirring knocks that air out, so the cake bakes up dense instead of light.
