Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, acidity and flavour of the soup.
Butter
Fat that carries flavour and helps form the smooth base with the flour.
Flour
Thickens the soup by forming a roux with the butter.
Baking soda
Neutralises some of the tomato's acidity, mellowing the flavour and softening the colour.

The step that matters

Stir in the baking soda. Baking soda reacts with acid and releases carbon dioxide, so adding too much can make the soup taste soapy or metallic. Stir it in gradually and check the taste before serving.

Swap the tomato

How well each one fits the dish's main ingredients (clove, onion, sugar, parsley, butter, flour):

  1. Shallotfits better
  2. Leekfits better
  3. Chivefits better
  4. Tomatothe original

Fit is the average pairing score against clove, onion, sugar, parsley, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
