White Mountain Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, beat the egg whites until stiff peaks form.

  3. In another bowl, cream the butter and sugar together until light and fluffy.

Make the batter

  1. Add the milk, raisins, split almonds, citron, and mix well.

  2. Sift the flour and baking powder together, then gradually add to the butter mixture.

  3. Gently fold in the beaten egg whites.

  4. Flavor the batter with lemon or vanilla extract.

Bake

  1. Pour the batter into a greased cake pan and bake for 30-35 minutes or until a toothpick comes out clean.

What each ingredient does

Egg whites
Whipped to stiff peaks, they give the cake its light, airy structure.
Butter
Creamed with sugar to trap air, adding tenderness and richness to the crumb.
Sugar
Creamed with butter to aid aeration and add sweetness and browning.
Flour
Provides the structure that sets the cake as it bakes.
Baking powder
Releases gas in the batter, helping the cake rise.
Milk
Adds moisture and helps form a tender crumb.

The step that matters

Gently fold in the beaten egg whites. Folding preserves the air whipped into the egg whites. Stirring vigorously would deflate them, leaving a denser, less risen cake.

Swap the lemon

Fit is the average pairing score against egg, butter, sugar, milk, raisin, almond, flour. Candidates are from the same food group and used in at least 100 recipes.
