What each ingredient does

Isinglass
Gelatin-like setting agent that firms the liquid into a sliceable, wobbly set when chilled.
Milk
Provides the creamy body and rich, smooth texture of the finished dessert.
Sweet almonds
Supply the main almond flavour and body that the dessert is built on.
Sugar
Adds sweetness and balances the almond flavour.

The step that matters

Simmer gently until the isinglass melts. Isinglass must dissolve fully without boiling hard, because overheating can weaken its setting power and a thorough, gentle melt lets it set evenly when chilled.

Swap the lemon
