Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Barley flour
Provides the structure that holds the cake together as it bakes.
Eggs
Bind the batter and, when beaten whites are folded in, add lift and a light crumb.
Baking powder
Releases gas in the batter so the cake rises in the oven.
Syrup
Adds sweetness and moisture, and helps the cake brown and stay tender.
Fat
Tenderizes the crumb and carries the spice flavours.

The step that matters

Folding in the egg whites. Beaten whites trap air that gives the cake lift. Stirring them in vigorously knocks the air out, and the batter then bakes denser and flatter.

Swap the ginger

How well each one fits the dish's main ingredients (sugar, syrup, egg, milk, vanilla, cinnamon, clove):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits about as well
  4. Gingerthe original

Fit is the average pairing score against sugar, syrup, egg, milk, vanilla, cinnamon, clove. Candidates are from the same food group and used in at least 100 recipes.
