What each ingredient does

Duck
Provides the main meat, which becomes tender through long, slow stewing.
Salt pork
Adds fat and savory flavor that seasons the stew and the duck as it cooks.
Brown flour
Thickens the cooking liquid into a body-rich sauce when stirred in and boiled.
Onion
Adds aromatic sweetness and depth as it softens in the stew.

The step that matters

Stewing slowly with the lid on. Low, covered heat breaks down the connective tissue in duck gradually, making it tender. Rushing with high heat can toughen the meat and dry the liquid before the flavors blend.

Swap the peas

How well each one fits the dish's main ingredients (pork, chicken, pepper, sage, onion, flour):

  1. Beansfits better

  3. Lentilsfits better

Fit is the average pairing score against pork, chicken, pepper, sage, onion, flour. Candidates are from the same food group and used in at least 100 recipes.
