Why it works: Flour and butter are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Roast Mutton
Ingredients
Directions
Prepare
Trim off any inedible parts of the mutton, then wash and dry it with a clean cloth.
Place the mutton in a roasting pan and add a little water for initial basting.
Roast
Roast for about 12 minutes per pound in a strong fire.
Do not salt the meat initially to prevent it from hardening; salt it after it begins to roast well.
If it browns too quickly, cover it with a sheet of white paper.
Baste often.
About 15 minutes before it's done, lightly dredge the meat with flour and baste with butter.
Serve
Skim the gravy and thicken it slightly with brown flour before serving.
Serve with currant jelly or another tart sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Mutton (in the method)
- Its fat and connective tissue soften and enrich the meat as it roasts, giving juicy, tender results.
- Flour
- Dredged on the surface, it helps form a crisp, browned crust during the final roasting.
- Butter
- Basting with butter adds fat that promotes browning and a rich, savoury flavour on the surface.
- Currant jelly
- Its tartness cuts through the richness of the roasted mutton, balancing the flavour on the plate.
The step that matters
Delay salting the meat. Salt added at the start can draw out moisture and toughen the surface of the meat. Salting after the meat has begun to roast helps keep it tender and juicy.
