Ingredients

Directions

Prepare the cucumbers

  1. Select medium small-sized cucumbers.

  2. Prepare a brine that will float an egg and heat it until boiling. Pour the boiling brine over the cucumbers and let them stand for 24 hours.

  3. Wipe the cucumbers dry.

Pickle

  1. Heat vinegar until boiling and pour it over the cucumbers, letting them stand for another 24 hours.

  2. Change the vinegar to fresh vinegar, adding 1 quart of brown sugar, 1 pint of white mustard seed, a small handful of whole cloves, a small handful of cinnamon sticks, 1 piece of alum (size of an egg), and ½ cup of celery seed. Heat the mixture until boiling and pour it over the cucumbers.

What each ingredient does

Cucumbers
The main vegetable, which softens and turns crisp-tender and absorbs the pickling flavour during the soaks.
Brown sugar
Adds sweetness that balances the sharp vinegar in the sweet pickle.
Vinegar
Provides the acidity that preserves the cucumbers and gives the pickle its sour bite.
White mustard seed
Adds a sharp, pungent flavour that mellows during the long soak.
Celery seed
Contributes a savoury, earthy aroma to the pickling liquid.

The step that matters

Pouring the boiling brine and vinegar over the cucumbers. Pouring boiling liquid over the cucumbers heats the pickles and begins softening and flavouring them. Letting them stand the full 24 hours each time allows the brine and vinegar to penetrate evenly.

Swap the celery
