Shirred Eggs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Melt a small piece of butter in a large white dish.

Cook

  1. Carefully break the eggs into a saucer, one at a time, and slip them into the hot dish.

  2. Sprinkle a small quantity of pepper and coarse sea salt over the eggs.

  3. Cook for four to five minutes.

  4. For added richness, add 1 tablespoon of cream for every 2 eggs when they are first added.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Proteins set in the heat, giving the dish its firm, cooked structure.
Butter
Melted fat coats the dish and adds richness and a savory flavor to the eggs.
Cream
Adds moisture and richness, softening the texture of the set eggs.

The step that matters

Cook for four to five minutes. Egg whites set at moderate heat while yolks stay soft. Cooking too long makes the yolks firm and dry, so check the eggs as they set.
