Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base of the sauce that gives the toast its creamy body.
Egg
Thickens the sauce gently and adds richness when stirred in off the heat.
Butter
Adds richness and a smooth, silky mouthfeel to the sauce.
Flour
Thickens the liquid into a smooth sauce when heated with it.
Rich cream
Adds fat and richness, giving the sauce a full, velvety texture.

The step that matters

Stir in the flour-cream mixture gradually. Adding the flour mixture slowly to the boiling milk, while stirring, keeps starch dispersed so the sauce stays smooth instead of lumpy. Heat then thickens the starch as it cooks.
