Why it works: Sugar and lemon are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 53,532 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓
Strawberry Jelly
Ingredients
Directions
Prepare the juice
Pick the strawberries and place them in a pan.
Squeeze the strawberries with a wooden spoon to extract the juice.
Add enough pounded sugar to sweeten the strawberries and let them sit for 1 hour.
Add ½ pint of water to the extracted juice.
Strain the strawberry juice and water through a clean cloth.
Set the jelly
Dissolve ½ package of Cox's gelatine in ¼ cup of water.
Mix the dissolved gelatine with the strawberry juice.
If desired, add 1 teaspoon of lemon juice to enhance the flavor.
Pour the mixture into a mold and set it on ice.

What each ingredient does
- Strawberries
- Provide the main flavour, colour and the juice that forms the jelly.
- Cox's gelatine
- Sets the liquid into a firm, wobbly jelly as it cools.
- Pounded sugar
- Sweetens the strawberry juice and balances its natural tartness.
- Lemon juice
- Adds acidity that brightens the strawberry flavour.
The step that matters
Dissolve the gelatine fully before mixing. Undissolved gelatine granules will not set evenly and can leave lumps or soft spots. Gelatine must be fully dissolved in warm liquid and then combined evenly with the juice so the jelly sets uniformly.
