What each ingredient does

Sour milk
Its acidity causes the milk proteins to curdle and separate from the whey.
Milk or cream
Adds moisture and richness, loosening the mashed curds into a creamy texture.

The step that matters

Draining the curds. Draining until all whey has dripped out matters because leftover whey makes cottage cheese watery and sour-tasting. Thorough draining gives a firmer, cleaner-tasting result.
