Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides rich meaty flavour and body to the broth as it simmers.
Salt pork
Adds fat and savoury depth that carries flavour through the soup.
Honeycomb tripe
Adds chewy texture after frying, which helps it hold shape in the broth.
Egg yolk
Thickens the broth and gives it a smoother, richer mouthfeel.
Flour
Thickens the broth by swelling with liquid as it heats.

The step that matters

Thicken the broth. Flour needs to be cooked in the hot liquid to swell and thicken it smoothly. Egg yolk can curdle or scramble if it is added to boiling liquid, so it should be tempered and added gently.

Swap the peas

How well each one fits the dish's main ingredients (beans, celery, carrot, onion, rice, lettuce, potato):

  1. Chickpeafits better
  2. Lentilsfits better
  3. Sesamefits better
  4. Peasthe original

Fit is the average pairing score against beans, celery, carrot, onion, rice, lettuce, potato. Candidates are from the same food group and used in at least 100 recipes.
