What each ingredient does

Eggs
Bind the batter and give the gingerbread its structure as they set in the oven.
Sugar
Adds sweetness and helps the crumb brown as it bakes.
Flour
Provides the main structure that holds the batter together once baked.
Baking powder
Releases gas during baking so the gingerbread rises and becomes lighter.
Sweet almonds
Add fat, texture and a nutty richness to the crumb.

The step that matters

Slowly add the flour, salt, and baking powder. Adding dry ingredients gradually and mixing well keeps the batter smooth and evenly aerated, so the baking powder lifts the cake evenly instead of leaving dense pockets of flour.
