Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Knuckle of veal or lean beef
Provides collagen and meat flavor that give the stock body and depth as it simmers.
Bacon or ham
Adds smoky, savory fat and salty depth to the broth.
Onions
Contribute sweetness and aromatic flavor as they soften in the simmering liquid.
Celery
Adds aromatic, vegetal flavor that rounds out the stock.

The step that matters

Bring to a gentle simmer. Boiling vigorously emulsifies fat into the liquid and makes the stock cloudy. A gentle simmer keeps it clear and lets collagen dissolve slowly for a cleaner, fuller flavor.
