Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the butter, sugar, flour, egg, and cold water until well combined.

  3. Roll the dough very thin and cut it into squares or diamonds.

Decorate and bake

  1. Wash the tops with the egg white.

  2. Sprinkle powdered sugar and cinnamon over the tarts.

  3. Place four or five blanched almonds on each tart.

  4. Bake until lightly golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and tenderness, helping the dough bake short and crisp.
White sugar
Adds sweetness and helps the tarts brown lightly as they bake.
Flour
Provides the structure that holds the thin dough together.
Egg
Binds the dough and adds structure and richness.
Cold water
Adds moisture so the dough comes together without becoming tough.

The step that matters

Roll the dough very thin. Thin dough bakes through into a crisp, delicate tart. Thick dough stays soft in the middle and can spread unevenly or bake dense.
