Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Separate the egg whites and place them in a large bowl.

Make the batter

  1. Add salt and baking powder to the egg whites and beat until very stiff.

  2. Gradually add the sugar and flavorings, beating thoroughly.

  3. Carefully fold in the sifted flour.

  4. Pour the batter into an ungreased tube pan.

Bake

  1. Bake for 50 minutes or until a toothpick inserted comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into stiff foam that gives the cake its light, airy structure.
Granulated sugar
Sweetens the cake and stabilizes the whipped egg white foam as it is added.
All-purpose flour
Provides the set structure that holds the airy foam together as it bakes.
Baking powder
Releases gas during baking to help the cake rise further.

The step that matters

Folding in the flour. Flour must be folded in gently so the whipped egg white foam does not deflate. Overmixing knocks out the air that gives angel cake its lift, leaving a dense, tough crumb.
