Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 300°F (150°C).

  2. Fill a shallow pudding dish or deep pie plate with ripe, peeled peaches, leaving the pits in for flavor.

  3. Add cold water to half fill the dish.

  4. Roll out a light paste to twice the thickness used for pies and cover the peaches.

  5. Cut slits across the crust and prick with a fork.

  6. Bake for about 45 minutes.

  7. Before covering, sprinkle sugar over the peaches.

  8. Serve warm or cold, inverting the crust after cutting into sections and piling the peaches on top.

  9. Enjoy with sweet cream.
