Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid mixture into a soft, sliceable structure as it cools.
Egg whites
Whipped into foam, they add lightness and the airy, snowdrift texture.
Sugar
Sweetens the dessert and balances the tartness of the lemon.
Peaches
Supply fruit flavour and moisture to the set mixture.
Lemon juice
Adds acidity that brightens the sweetness and the peach flavour.

The step that matters

Beating in the egg whites. Add the egg whites only when the mixture has started to thicken. If it is still liquid, the whites deflate and the foam loses its lift; if it is too set, they will not blend in evenly.
