Ingredients

Directions

  1. Chill all ingredients until very cold.

  2. Sift the sugar and flour twice, leaving the flour in the sifter.

  3. Beat the yolks of the eggs, gradually adding the sugar until stiff.

  4. Add part of the ice water and more sugar, then continue adding water, sugar, and half the lemon juice until all sugar is incorporated.

  5. Stir in half the nut meal, a pinch of salt, and the citron.

  6. In a separate bowl, beat the egg whites with a pinch of salt until moderately stiff.

  7. Add the remaining lemon juice and beat until dry and feathery.

  8. Gently fold the beaten egg whites into the yolk mixture, sprinkling some nut meal and a little flour over the top as you mix.
