What each ingredient does

Cauliflower
Forms the main body of the dish, and its stalks soften as it cooks while the florets stay tender.
Melted butter
Adds richness and a smooth fat coating that carries flavour over the cooked cauliflower.
Milk
Optional addition to the cooking water that can give the cauliflower a milder, creamier flavour.

The step that matters

Remove the cauliflower immediately once tender. Cauliflower keeps cooking from residual heat after it leaves the water, so leaving it in too long turns it soft and mushy and loses the crisp bite the recipe aims for.
