Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the creamy base of the soup and gives it body and richness.
Flour
Thickens the milk as it cooks, giving the soup a smooth, body-filled texture.
Butter
Adds fat for a rich, smooth mouthfeel and flavor.
Celery
Provides the main vegetable flavor and, once mashed, most of the soup's body.

The step that matters

Add the flour mixture to the boiling milk. Flour mixed with cold milk first keeps it from clumping. Adding it to hot milk while stirring and cooking for the full time lets the starch swell evenly and thicken the soup smoothly.

Swap the mace

How well each one fits the dish's main ingredients (milk, flour, butter, celery, onion, pepper, cream):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against milk, flour, butter, celery, onion, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
