What each ingredient does

Rice
Starch that softens in milk and thickens into the pudding's body.
Milk
Liquid that cooks the rice and gives the pudding its creamy moisture.
Sugar
Adds sweetness to balance the milk and seasoning.

The step that matters

Beating the rice until smooth. Beating breaks up the softened grains so the pudding sets into an even, smooth texture rather than a lumpy one. Packing lightly into the mold keeps it from becoming dense and stiff when turned out.

Swap the orange

The recipe marks orange as optional. How well each one fits the dish's main ingredients (rice, milk, sugar, almond, lemon):

  1. Vanillafits better
  2. Coconutfits about as well
  3. Figfits about as well
  4. Orangethe original

Fit is the average pairing score against rice, milk, sugar, almond, lemon. Candidates are from the same food group and used in at least 100 recipes.
