Sausage Rolls

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the sausages

  1. Plunge the fresh sausages into fast-boiling water and boil for a few minutes.

  2. Remove the skins and slit the sausages in halves lengthwise.

Assemble and bake

  1. Lay a half sausage in the center of each square of puff pastry.

  2. Fold the pastry over the sausage, joining it neatly in the center and pressing the ends together.

  3. Place the rolls on a greased baking sheet and brush them with beaten egg.

  4. Bake in a preheated oven at 400°F (200°C) for about 15 minutes.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh sausages
Forms the savory meat filling, adding fat and moisture that flavor the surrounding pastry.
Puff pastry
Provides the flaky, layered wrapper that puffs and crisps as steam forms during baking.
1 egg
Brushed on before baking, it promotes browning and gives the pastry a glossy finish.

The step that matters

Pressing the seam closed. The ends and center seam must be sealed firmly. If the pastry opens, filling can leak out and steam escapes instead of lifting the layers, so the rolls bake unevenly and look less risen.

Swap the onion

How well each one fits the dish's main ingredients (egg, pepper, sage):

  1. Capsicumfits better
  2. Spinachfits better
  3. Sweet potatofits better
  4. Onionthe original

Fit is the average pairing score against egg, pepper, sage. Candidates are from the same food group and used in at least 100 recipes.
