Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Pour off all the grease from the baking pan.

  2. Dredge the pan with a little flour.

  3. When the flour is brown, gradually add a little hot water.

  4. Season with salt and pepper.

  5. Cook for 5 minutes, then strain.

  6. Add the chopped giblets.
