Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. Sift together the graham flour, wheat flour, sugar, salt, and baking powder.

  2. In a separate bowl, beat the eggs and add the milk.

  3. Gradually pour the egg and milk mixture into the flour mixture, beating until smooth.

Bake

  1. Pour the batter into hot, buttered gem pans.

  2. Bake for about 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set in the oven.
Baking powder
Releases gas in the batter, helping the gems rise and become light.
Graham flour
Provides the main structure and a coarse, nutty texture.
Milk
Hydrates the flour and adds moisture and richness to the batter.
Butter
Adds fat for tenderness and flavor, and helps the gems release from the pan.

The step that matters

Pour the batter into hot, buttered gem pans. Hot, greased pans start the crust setting as soon as the batter touches them, helping the gems rise and release cleanly instead of sticking or spreading.
