Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Core, pare, and slice the apples into 1-inch thick slices, leaving the core hole in the center.

  2. Mix the cinnamon with the sugar and squeeze a little lemon juice on the apple slices.

  3. Sprinkle the cinnamon-sugar mixture over the slices and let them stand for 20 minutes.

  4. Dip each slice in the fritter batter and fry in hot oil for about 4 minutes.

  5. Serve with foamy sauce.
