Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks set to a soft, rich centre while whipped whites form a light, airy covering.
Butter
Fat that coats the pan, prevents sticking and adds richness and browning.
Toast
Warm base that holds the cooked egg and adds a crisp, contrasting texture.

The step that matters

Separate the eggs carefully and keep the yolks intact. Even a trace of yolk in the whites stops them whipping to stiff peaks, since fat interferes with foam formation. A broken yolk also runs out and spoils the neat presentation.

Swap the parsley

How well each one fits the dish's main ingredients (egg, butter):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Capersfits about as well
  4. Tarragonfits less well

Fit is the average pairing score against egg, butter. Candidates are from the same food group and used in at least 100 recipes.
