What each ingredient does

Oysters
Main ingredient that cooks quickly and provides the dish's tender, briny flesh.
Butter
Conducts heat across the pan and adds richness and browning to the oysters.

The step that matters

Drying the oysters thoroughly. Surface water must evaporate before browning can occur, and on a hot pan it can cause spattering and steaming instead of a seared surface. Dry oysters brown better and cook more evenly.
