What each ingredient does

Coffee
Forms the main body of the dish, and roasting browns its sugars and proteins into rich flavor.
Butter
Adds a small amount of fat that rounds out the roasted flavor and gives a smoother finish.

The step that matters

Stirring while the coffee roasts. Beans left still on the hot iron scorch on the bottom before the rest brown. Constant stirring spreads the heat evenly, so the coffee reaches a dark brown rather than black.
