Why it works: Almond and rice match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 1,456 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓

White Soup

Ingredients

Directions

Make the base

  1. Boil the crumb of a roll in the milk.

  2. In a mortar, beat the yolks of the hard-boiled eggs with the sweet almonds and cayenne pepper until well combined.

  3. Add the egg mixture to the stock and stir well.

Thicken and finish

  1. If using rice, wash and blanch it in boiling water, then add it to the soup and let it stew until it swells.

  2. To thicken, use ground rice, bruised sago, tapioca, or arrow-root.

  3. If using macaroni, soak it in cold water and add it to the soup until tender.

  4. Add vermicelli after thickening, as it requires less cooking time.

  5. If the stock is made with fowl, pound the white meat and add it to the soup for improvement.

  6. Serve with grated Parmesan cheese if desired, but note it may alter the soup's delicacy.

What each ingredient does

Hard-boiled egg yolks
Enrich the soup with a smooth, rich body and fat that carries flavour.
Sweet almonds
Add nutty flavour and a creamy texture when ground into the mixture.
Milk
Softens the bread crumb and adds creaminess to the base.
Crumb of a roll
Soaked and boiled in milk, it helps give the soup body.
Stock
Forms the liquid base that carries the other ingredients.

The step that matters

Combining the egg and almond mixture into the stock. Egg yolks thicken and can curdle if the liquid is too hot or added too quickly. Stir well and keep the heat gentle so the soup stays smooth.

Swap the almond

How well each one fits the dish's main ingredients (milk, egg, pepper, rice, parmesan cheese):
