Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Ingredients

Directions

Prepare the apples

  1. Quarter the codlings and place them in a preserving pan with the lemon peel, cinnamon, and cloves.

  2. Add enough spring water to just cover the apples and boil until they become a pulp.

Make the jelly

  1. Strain the mixture through a jelly bag to extract the juice.

  2. For every pint of juice, add ¾ pound of sugar and boil rapidly until it jellies.

  3. Pour the jelly into pots or molds to set.

What each ingredient does

Codlings
Provide the bulk of the fruit, and their natural pectin helps the jelly set.
Loaf sugar
Sweetens the jelly and, with boiling, helps it set firm.

The step that matters

Boil rapidly until it jellies. Rapid boiling concentrates the juice and sugar until pectin and acid form a gel. Boiling too gently or too briefly leaves the jelly runny, while overcooking can make it stiff or dull in flavour.

Swap the lemon

How well each one fits the dish's main ingredients (apple, cinnamon, clove, sugar):

  1. Vanillafits better
  2. Quincefits better
  3. Pearfits better
  4. Lemonthe original

Fit is the average pairing score against apple, cinnamon, clove, sugar. Candidates are from the same food group and used in at least 100 recipes.
