To Clarify Dripping

  1. Melt the dripping in a clean pan over medium heat until just boiling.

  2. Remove from heat and pour into another pan filled with boiling hot water.

  3. Stir well with a broad wooden spoon.

  4. Let it cool in a safe place until the next day.

  5. The clarified dripping will float on the surface of the water.
